450g (1lb) Fresh Raspberries
450g (1lb) Granulated Sugar (white)
A small packet of Tronchetto Liquorice or 60gm 2oz (small pieces)
Juice of one fresh lemon
Cook fresh Raspberries in a large pan over a medium heat, add lemon juice and sugar and simmer stirring occasionally until the sugar has dissolved. Add your chopped Liquorice, then simmer gently until dissolved. Bring to boiling point and boil rapidly for 5/7 minutes, until the mixture reaches setting point. Test with a clean spoon, tilt the spoon and if the falls into a jam flake then it is ready.Decant into hot sterilized jars, seal and label once cool
